Apple Pancakes

Pancakes are by far one of my favorite things to eat. And I like real fruit in pancakes. Not the syrup goo that some places put on top, but actual cut up fruit.

I don’t think I have ever had apple pancakes though.


I have to say they were quite enjoyable. The apple cooks nicely. I cut the fruit into fairly small pieces which helped.

The cinnamon gives the pancakes some color and a little of the cinnamon flavor.

The batter is a little thick, the pancakes had a nice fluffiness.


I served these with the Hasty Omelet as a breakfast for dinner. It was a lovely dinner.
APPLE FLAPJACKS
1 Tablespoon Shortening
1 Tablespoon Sugar
2 Eggs
1 1/2 Cups Sifted Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Cinnamon
1 Cup Apples, Chopped Fine
1 Cup Milk
Cream shortening and sugar. Add beaten eggs. Sift in flour with baking powder and cinnamon. Stir in the chopped apples. Gradually add milk to make a medium batter. Bake on a griddle as for ordinary pancakes.
