Better Than Expected

We all have those nights where dinner time rolls around. You get ready to prep only to discover that you forgot to defrost any meat!



This is the perfect recipe for such a night! No defrosting, but still packed with protein.




I cooked my spaghetti whole. While trying to blend all the ingredients together, I found that the noodles were a bit un-wielding. So I cut them. This made it infinitely easier to serve and eat.




The interesting part of this recipe was the garlic spread. I used the Alloutte Garlic and Herb Spread. Not only did the spread give the sauce a ton of creaminess, it was also deliciously garlic and herby.




The sherry really adds some depth to the sauce. You can still taste it in the final product. The alcohol, of course, cooks out.



The mushrooms give the dish a bit of earthiness. I would usually opt for fresh mushrooms, but this recipe really needs the canned. You do use the mushrooms and the liquid they are packed in.



The cheese was an interesting touch to me as well. It gives the sauce a touch of sharpness. It also adds to the creaminess.




There is a lot of tuna! Almost every bite has some tuna in it.



The parmesan on top forms a softish crust. I absolutely love the parmesan crust on a casserole.



I was expecting a ho-hum tuna casserole. The dish had a much more intense flavor and we actually really enjoyed it. Even my daughter, who initially turned up her nose, went for seconds.



TUNA TETRAZZINI

4 Ounces Spaghetti Noodles

3 Tablespoons Garlic Spread

1/4 Cup Flour

1 Cup Milk

1/4 Cup Sherry

4 Ounce Can Mushrooms

8 Ounces Grated Cheddar Cheese

1/2 Teaspoon Seasoned Salt

1/4 Teaspoon Pepper

14 Ounces Canned Tuna, Drained

2 Tablespoons Grated Parmesan


Cook spaghetti and drain. In a double boiler over boiling water, melt garlic spread. Stir in flour. Add milk a little at a time. Stir in sherry and mushroom liquid. Cook, stirring, until thickened. Heat oven to 350 degrees. Add cheese, seasoned salt and pepper to sauce. Stir until cheese is melted. Stir in cooked noodles, tuna and mushrooms. Pour into a baking dish. Sprinkle with parmesan cheese. Bake 20 minutes.
