Carrot Salad

This is basically a carrot salad. I guess it is considered a vitamin salad from all the vitamins in the carrots?

The main difference between this recipe and a traditional carrot salad is that there are no raisins.

Not that I mind that at all. It is one of the reasons I don’t really eat carrot salad. I don’t really care for raisins. I mean, I will eat them, but they aren’t my first choice.

I used about three and a half carrots to get the two cups of grated carrots. They mix very nicely when grated, but you still get some crunch from them.

The nuts were an interesting touch. I used walnuts, but you could really pick anything.


I did not use the whole jar of cooked salad dressing. After mixing in portions, I ended up using about a 1/3 of a cup. Obviously, you can adjust the dressing to how much you want.

This was a different recipe, but it was quite tasty. It was a perfect side dish for a warm summer day!
VITAMIN SALAD
2 Cups Grated Raw Carrots
2 Tablespoons Lemon Juice
1 Cup Diced Celery
1/4 Cup Finely Chopped Nuts
1 Recipe Cooked Salad Dressing
Mix together the carrots, lemon juice, celery and nuts. Toss lightly with salad dressing. Chill until very cold.
