Cheesy Biscuits

Nothing goes better with lasagna than a little garlic bread.



Normally I would have made bread earlier in the week, then spread it with a garlic butter spread - lightly toasted.




I had a crazy busy week, so did not make any bread this week. I certainly did not want to use store bought bread to make garlic bread. So I searched my recipe archives for an alternative.



This recipe seemed like a great way to get the garlic flavor. And the addition of cheese couldn’t hurt. . .



The muffins are pretty simple to make. It is a basic muffin recipe.



I will admit that I doubled the amount of garlic the recipe called for. I didn’t think 1/8 teaspoon was enough.



For the cheese I used cheddar.



The muffins reminded me a little of Cheddar Bay Biscuits at Red Lobster.



They went perfectly with the lasagna dinner. Spread with a little butter, they were absolutely amazing!



CHEESE GARLIC MUFFINS

2 Cups Sifted Flour

1 Tablespoon Baking Powder

1/2 Teaspoon Salt

3 Tablespoons Sugar

1 Egg, beaten

1 Cup Milk

3 Tablespoons Oil

1 Cup Grated Process Cheese

1/8 Teaspoon Garlic Salt


Sift together flour, baking powder, salt and sugar. Mix in cheese and garlic salt. Combine egg, milk and oil. Pour into dry ingredients all at once. Stir until just moistened, but still lumpy. Spoon batter into greased muffin cups, filling 2/3 full. Bake in a 425 degree oven for 24 minutes.
