Citrus Bread

I had some oranges that needed to be used. I figured this would be a good recipe to use them as it would also provide a nice breakfast for the family.

The bread is very easy to put together. It really only takes minutes.

The longest part of the recipe is the cooking time.

The bread has a lovely and crisp outer edge. This gives you a nice crust to keep the bread together.

The inside of the bread is perfectly moist and soft.

There is a lovely orange flavor in every bite. The rind and juice really do their job in this recipe!

The walnuts add a lovely crunch to the bread, and just a touch of saltiness.

The bread was delicious warmed up with a spread of butter!
ORANGE NUT BREAD
2 1/4 Cups Sifted Flour
2 1/4 Teaspoons Baking Powder
1/4 Teaspoon Baking Soda
3/4 Teaspoon Salt
3/4 Cup Sugar
3/4 Cup Chopped California Walnuts
2 Tablespoons Melted Shortening or Oil
1 Egg, beaten
3/4 Cup Orange Juice
1 Tablespoon Grated Orange Peel
Sift dry ingredients into a mixing bowl. Add nuts, melted shortening, egg, orange juice and peel. Stir until mixture is dampened but not smooth. Pour into a loaf pan. Bake in a 350 degree oven for 70 minutes. To prevent cracking, cover with another pan for the first 20 minutes of cooking.
