Coffee Spiced Cookies

What a surprise to have coffee in this cookie!

The applesauce gives the cookies a lovely sweetness.


The coffee adds a lovely color. And you get just a hint of the coffee flavor.


The cinnamon, nutmeg and cloves give the cookies a nice spice feel.

The raisins give the cookies plump little bits of goodness.

I used walnuts for the nut portion. I thought they would go best with the applesauce and raisins.

The cookies are very light and pillowy. They have a very cake like feel.

And they are different. So this is the perfect recipe when you want a cookie that isn’t the same old same old.
APPLESAUCE COOKIES
1 Cup Shortening
2 Cups Packed Brown Sugar
2 Eggs
1/2 Cup Cold Coffee
2 Cups Well Drained Thick Applesauce
3 1/2 Cups All Purpose Flour
1 Teaspoon Baking Soda
1 Teaspoon Salt
1 Teaspoon Cinnamon
1 Teaspoon Nutmeg
1 Teaspoon Cloves
1 Cup Raisins
1/2 Cup Coarsely Chopped Nuts
Mix shortening, sugar and eggs thoroughly. Stir in coffee and applesauce. Sift flour and mix in with remaining ingredients. Chill 2 hours. Heat oven to 400 degrees. Drop rounded tablespoonfuls of dough 2 inches apart on a lightly greased baking sheet. Bake 9 to 12 minutes.
