There is nothing better on a cold day than a bowl of chicken soup! Well, maybe things are better, but it certainly doesn’t hurt!



This is an old fashioned chicken soup recipe.




You start by making your own broth. Cooking the chicken pieces with the ham give the broth a nice meaty feel. You could do this with a ham bone as well. It really just adds dimension to the broth.




I did add some of the ham pieces to the final soup along with the chicken. The recipe didn’t call for this, but it sounded like a good idea to me.




I do not think there was enough rice. I would probably double the amount if I were to make this again.




The milk and flour slurry give the soup a lovely creaminess. It also thickens nicely.



I served the soup with the sourdough bread I made. It was the perfect combination!



This soup is hearty and delicious. Great depth of flavor and it certainly gave us the warm hug feel we were looking for!



CHICKEN SOUP

1 Fryer Chicken

1/2 Pound Ham

1 Onion

2 to 3 Quarts Water

1/4 Cup Rice

1 Cup Milk

1 Tablespoon Chopped Parsley

Salt and Pepper

1 Tablespoon Flour

1 Tablespoon Fat


Cut chicken into pieces. Add to kettle with ham and onion. Cover with water. Simmer until the meat is very tender, strain. Remove all possible fat. Add rice, parsley, salt and pepper. Simmer until the rice is tender. Add milk. Make a roux of the flour and fat, add. Cook until soup is thickened.
