This recipe is a great use for leftovers!

I had a pot roast earlier in the week, there was plenty of meat left. I also saved the juice it had cooked in.

I did not have any gravy, but thought the meat juices would work okay.

I have to be honest, I do not know what onion juice is. So, I didn’t use any – obviously!

The dish is actually quite tasty. The meat was tender, and who doesn’t love mashed potatoes!

Truly is comfort food . . .
MEAT AND POTATO CASSEROLE
3 Cups Mashed Potatoes, Seasoned
2 Cups Diced Cooked Meat
Gravy
½ Teaspoon Onion Juice
1 Tablespoon Butter
Cover bottom of a shallow baking dish with a layer of mashed potatoes. Over this spread leftover meat, leftover gravy, and onion juice. Cover with a layer of mashed potatoes. Dot with butter and place in a 400 degree oven. Cook for 20 minutes.
