Crispy and Delicious

This is as simple a recipe as a recipe can get! But it sure does taste good! I guess it’s like they say – simple ingredients, good dish.

I used a combination of yellow and white cornmeal. Mostly because I was running low on white cornmeal! I used about a teaspoon of salt and ½ teaspoon of pepper.

For the catfish, I dredged them in the cornmeal mixture and laid them out on a wire rack. I left them sit for about twenty minutes before cooking. This helped to ensure the cornmeal adhered well to the fish.

I fried the fillets for 3 to 5 minutes per side depending on the size of the fillet. I used vegetable oil for frying.

Once the frying was done I drained the fillets on the wire rack with paper towels underneath.


The catfish was moist and flaky. The cornmeal breading was super crisp and flavorful.

The breading was also very thin, so it wasn’t overwhelming. You had the cornmeal taste, but it didn’t overwhelm the fish.



This was a great dish!


SOUTHERN FRIED CATFISH

5-6 Catfish Fillets

White Corn Meal

Salt and Pepper to Taste


Combine salt, pepper, and corn meal. Dredge catfish fillets in cornmeal mixture. Fry in 370 degree oil until golden brown.
