Delicious Soup

I am a big fan of soup on a chili day. Soup can fill you with warmth and make the day seem not so cold.

We had just such a day where I live yesterday. It was cold and rainy. And soup seemed like just what was needed.

I love the addition of the salt pork in a traditionally vegetarian dish. It gave the base of the soup a lovely pork flavor.

The carrots, onion and celery are pretty traditional ingredients. They are soft and lovely after cooking.

The bell pepper and turnip were new additions for me. The turnip was a nice bitter element. The pepper a little sweetness. I greatly enjoyed both in the soup.

I did not peel my potatoes. I don’t mind potato skins, and I felt they would be fine in the dish. This is obviously a preference thing - peel them if you wish.

Adding the white sauce was also a new one for me. Using the already thickened sauce made thickening the soup quite easy.

I did season my white sauce with salt and pepper as I was making it. I only had to add a touch more salt before serving.

This recipe creates a nice hearty soup that certainly made us feel a little warmer during the cold rain!
POTATO CHOWDER
1/3 Cup Diced Salt Pork
2 Cups Diced Potatoes
1 Cup Diced Turnips
1 Cup Diced Carrots
1 Medium Onion, Minced
1 Stalk Celery, Diced
1 Green Pepper or Pimiento
2 Cups Thin White Sauce
Salt and Pepper
Fry pork and brown vegetables in the fat. Add boiling water to cover. Cook until tender. Add white sauce and season.
