Didn't Think They Would Taste Good

I have had cheese swirl brownies in the past, they are quite lovely usually. But I always imagine that they are made with cream cheese. Who doesn’t like cream cheese.



Imagine my surprise when I discovered that these brownies used cottage cheese. I mean, cottage cheese? That didn’t sound right. So, I had to make them, just to see if it would work, which I really didn’t think it would.




The brownie mixture was nice. It gave the brownies a thick, cake like texture. They were not overly chocolate either. Sometimes you want a fudge brownie, sometimes you don’t.



The cheese mixture was very thin. The cottage cheese chunks were very apparent. As I browned it over the chocolate, I was thinking what a waste of chocolate these would be.





My swirl didn’t look great. The filling was so thin it was difficult to spread the chocolate mixture over the top.





Well, somehow, magic happened in the oven. I did get a nice swirl in the top of the brownies.




And they were delicious! I would never believe you if you told me they were made with cottage cheese. It did not taste like cottage cheese at all.



The brownies were lovely, moist, and soft. The cheese mixture was perfectly cream cheese like. We really enjoyed them!



CHEESE SWIRL BROWNIES

1 Cup Sugar

1/2 Cup Butter

2 Eggs

1/2 Teaspoon Vanilla

2 Ounces Unsweetened Chocolate, Melted

1 Cup Cake Flour

1/2 Teaspoon Baking Powder

1/2 Teaspoon Salt

1 Cup Chopped Walnuts

CHEESE MIXTURE

1/4 Cup Sugar

2 Tablespoons Butter

1 Cup Cottage Cheese

1 Tablespoon Corn Starch

1 Egg

1/2 Teaspoon Vanilla



Mix sugar, butter, eggs, and vanilla for brownies. Blend in chocolate. Blend remaining brownie ingredients. Mix into chocolate mixture. For cheese mixture, cream sugar and butter. Add cheese and cornstarch, mix thoroughly. Add egg and vanilla. Blend well. Heat oven to 375 degrees. Spread half the brownie mixture into a 9 inch square pan that has been well greased. Pour cheese mixture over top. Spread remaining brownie batter over cheese mixture. Pull a knife through in both directions to marble. Bake 40 to 45 minutes. Cool and cut into squares.
