Easy Delicious Chicken

I enjoy fried chicken. But, I usually feel that it is just easier to buy it. I mean, it makes a mess!



Yes, this chicken is still fried, so it does create a bit of a mess. But, since you don’t have to fry the chicken until it is done, there is a lot less grease splatter.




The batter for this fried chicken recipe is quite nice. It is thick enough to stick but not so thick that all you get is breading.




I used a deep, heavy pot for frying. Corn oil worked nicely and did not add any grease flavor to the chicken.




The best part of this recipe is the even coating you get on the chicken. As I said before, since you are only browning it in the oil, it is easier to get the beautiful color.


The chicken finishes beautifully in the oven. It is moist on the inside, and cooked all the way through.



The outside keeps the golden color during cooking. It does darken a bit, but does not get overly brown.



I was very impressed with the recipe. It was a delicious dish with half the mess of the traditional fried chicken!



TWO STEP BATTER FRIED CHICKEN

1 Cup Flour

1 Teaspoon Baking Powder

1/2 Teaspoon Salt

1 Egg, beaten

2/3 Cup Milk

1 Fryer Chicken, Cut Up

1 Quart Corn Oil


Sift together dry ingredients. Mix egg, milk and 1 tablespoon oil, add to flour mixture and beat. Dip chicken in batter, coating completely. Drain. Pour remaining oil in a deep heavy skillet, 1/3 full. Heat to 375 degrees. Carefully add chicken, a few pieces at a time and fry for 4 minutes. Place in a shallow baking pan. Bake in a 350 degree oven for 30 minutes.
