Fabulous Onions

I have attempted to make onion rings in the past with varied results.



This is the first time I have done a presoak with the onions. I think it helped to mellow the onions and soften them up a bit.



The batter was very nice. It was certainly simple, but had a nice flavor, so was well seasoned.




The baking powder was the secret addition. This helped the batter plump up while frying. It gave you a much more substantial breading than I would have expected with the thin batter.



The breading also wasn’t overwhelmingly thick. I hate when there is more breading than onion!



This recipe gave you an even level of onion and breading.


The onions were sweet and perfectly soft after frying. And the frying really only takes a few minutes.



You do need to work in batches so as not to overcrowd the pan.



This was the perfect onion ring recipe! They were absolutely delicious!



BATTER FRIED ONION RINGS

6 Large Sweet Spanish Onions, Sliced 1/4 Inch Thick

Milk and Water

1/2 Cup Flour

3/4 Teaspoon Salt

1/4 Teaspoon Pepper

1/2 Teaspoon Baking Powder

1 Egg, Beaten

1/2 Cup Milk


Separate onions into rings and soak for 30 minutes in milk and water. Drain. Bake a batter by sifting dry ingredients and stirring in egg and milk. Dip rings into batter. Drain slightly. Drop into hot deep fat and fry until golden, turning once. Sprinkle with salt while draining.
