Great Side Dish

Sometimes you get tired of boring rice as a side dish. I like rice all by itself, but sometimes I just want a little something more.

I cooked the rice like I normally do. I added a little salt to the cooking water, and a little butter. Butter makes everything better.

The onion and mushroom sauté very nicely. The are soft and a lovely golden color.

Onion and mushroom are pretty simple. So you aren’t going crazy with the additions to the rice.

But they do add a lovely amount of flavor and some texture.

Using a mold to cook the rice in also adds something a little special.
Why have a pile of rice when you can have a molded shape of rice!

I have a mini bundt pan that I used. So each serving was a little bundt shaped mound of rice.

It wasn’t all that complicated of a recipe. It tastes lovely and has great presentation.
BAKED RICE RINGS
1/3 Cup Uncooked Rice
1 Medium Onion, Chopped
4 Teaspoons Butter
1/3 Pound Mushrooms, Sliced
Salt and Pepper
Wash rice thoroughly and cook in boiling salted water until tender, 20 to 25 minutes. Drain. Sauté onion in butter. Add mushrooms and cook about 10 minutes. Mix onions and mushrooms with rice and season. Pack mixture into buttered ring molds. Bake in a 350 degree oven for 30 minutes.
