It Needs More Cheese

What an interesting take on a sandwich.

To be honest, it isn’t really a sandwich, not even an open faced one. You definitely need a knife and fork to eat it.

The bacon is lovely with the tomato. I used plain white bread for the toast portion. Not too thick, not too thin.

The strange part of this “sandwich” is the white sauce. I don’t think the dish needs it. The sauce doesn’t really add anything other than a strange texture.

If it weren’t for the white sauce, you could pick up the toast like a sandwich.

And it needed more cheese. Not a huge amount more, but more.
BAKED TOMATO CHEESE SANDWICHES
8 Slices Toast Without Crust
8 Slices Crisp Bacon, Chopped
8 Slices Tomato
1/2 Pound Cheese, Shredded
2 Cups Medium White Sauce
Buttered Crumbs
Place toast in a buttered baking dish, cover with chopped bacon, then a slice of tomato. Place cheese on top of tomato. Pour white sauce over all and sprinkle with crumbs. Bake in a 350 degree oven for 25 minutes.
