Light and Yummy Quiche

I seem to be making a lot of quiche lately. I am okay with that, I think.

This quiche is light and fluffy and really very good.

The combination of ham and Swiss cheese is delightful. Those two ingredients really do go well together in many applications.

I did use a store bought pastry crust. I know, I know, I should have made it from scratch. I really didn’t want to cook the night I made this though. I figured just use the store bought and make dinner instead of going out. So that’s what I did.

The eggs come out super fluffy and creamy. I used half and half for the cream portion.

The quiche also sets well in the 45 minutes of cooking time. It wasn’t runny in the middle at all!

HAM AND CHEESE QUICHE

1 Pie Crust

6 Ounces Ham

½ Pound Swiss Cheese

1 ½ Cups Light Cream

½ Teaspoon Salt

3 Eggs

Preheat oven to 375 degrees. Bake pie shell 5 minutes; remove to rack to cool. Meanwhile, chop ham then spread into bottom of cooled pastry shell. Chop cheese and sprinkle over ham. Combine cream, salt and eggs, beating until smooth. Pour egg mixture into pie shell. Bake 40 to 45 minutes. Cool on a wire rack for 10 minutes before serving.
