Mexican Style Dirty Rice

This is one of those recipes that is technically a side dish, but is certainly hearty enough to be used as a main dish.

I did serve it as a side dish to the Tostados I made yesterday.

This recipe reminds me a lot of a dirty rice. Rice and meat equals dirty rice.
Of coarse, there are added vegetables to this rice too. The onion and bell pepper add a nice texture to the dish.

The tomato sauce makes the rice nice and thick.

I am not really sure what the mustard was for. You really didn’t taste it at all.

Overall this was a nice dish.
RICE CON CARNE
1/4 Cup Fat
1/2 Pound Hamburger
1 1/3 Cups Quick Cooking Rice
3/4 Cup Onion, Sliced Thin
1/2 Cup Chopped Bell Pepper
16 Ounces Tomato Sauce
1 3/4 Cups Hot Water
1 Teaspoon Prepared Mustard
1 Teaspoon Salt
1/8 Teaspoon Pepper
Sauté in fat the hamburger, rice, onion and bell pepper. Add remaining ingredients, bring to a boil. Cover and simmer for 15 minutes.
