Much Better Than Last Time

This is the second time I have made mints. This time went way better!

The mints are basically butter mints. Or after dinner mints.

The batter is very soft, so I ended up adding a bit more powdered sugar.

I do not have a candy mold, I should really invest in one of those!

I rolled the dough out and then cut it into bite sized pieces. This process did not take much time, and was pretty easy because the dough was so soft.

The mints dried well. That was definitely the problem the last time I made mints. They never really dried properly.

These mints were the perfect mixture of dry on the outside, but sift on the inside. You get a burst of the mint flavor when you bite down but then they just melt away.

PARTY MINTS

1 Pound Powdered Sugar

1/2 Cup Butter, Softened

2 Tablespoons Evaporated Milk

4 to 5 Drops Peppermint Flavoring

Food Coloring

Combine all ingredients in a large mixing bowl. Beat at high speed with an electric mixer until well blended, then knead until smooth. Shape mints in candy molds or by rolling and cutting. Use powdered sugar on hands and board to prevent sticking. Cover with a paper towel and let stand overnight to harden.
