I made these for a treat for my husband. He was having a meeting with his employees that was going to be quite boring. Nothing like a chocolate bribe to make people more excited to sit in a conference room for an hour.

I was a little concerned about how the bars were going together. The oatmeal portion was very sticky. I had to continually butter my fingers to spread it out.



The chocolate mixture is basically making fudge, but not allowing it to get to the correct temperature to meld.



I used pecans for the nuts. They added a nice bit of saltiness to the chocolate.

The oatmeal part is soft, kind of like a half baked oatmeal cookie.


The chocolate is also soft and gooey. And very rich.


The bars were still warm when I delivered them. The early meeting attendees were so fun love with the bars, they quickly grabbed a second bar before others showed up!

These were absolutely delicious!
OATMEAL FUDGE BARS
2 Cups Packed Brown Sugar
3/4 Cup Butter, Softened
2 Eggs
2 Teaspoons Vanilla
2 1/2 Cups Biscuick
3 Cups Oats
12 Ounces Semisweet Chocolate Chips
1 Cup Sweetened Condensed Milk
2 Tablespoons Butter
1/2 Teaspoon Salt
1 Cup Chopped Nuts
Heat oven to 350 degrees. Grease a jelly roll pan. Mix brown sugar, butter, eggs, and vanilla. Stir in baking mix and oats until uniform in consistency. Heat chocolate chips, 2 tablespoons butter, condensed milk and the salt in a 2 quart saucepan over low heat, stirring constantly, until smooth. Stir in nuts and vanilla. Press 2/3 of the oatmeal mixture with greased hands in pan. Spread chocolate mixture over oatmeal layer. Drop remaining oatmeal mixture by tablespoons onto the top. Bake until light brown, about 30 minutes. Cool completely and cut into bars.
