Packed With Vegetables

Potato salad can be made in so may different ways. Not all of them good. . .



This recipe is packed with vegetables. I was wondering if it would be a little busy to be honest.



We are growing radishes in our garden. I knew I wanted to use them in an interesting way, this seemed like the perfect recipe.



The cucumber was a new one for me. I don’t think I have ever had a potato salad with cucumber in it. I think it was a fabulous accompaniment to the spiciness of the radish.




The salad was nice and crunch, which is obviously different from a traditional potato salad. They tended to be one note and mushy.



We continually went back to the fridge for leftovers. It held up well for several days, and tasted great!



GARDEN POTATO SALAD

3 Cups Cold Cubed Cooked Potatoes

1/2 Teaspoon Salt

3/4 Cup Chopped Celery

1/2 Cup Cubed Cucumber

1/2 Tablespoon Chopped Onion

1 Tablespoon Chopped Parsley

12 Radishes, Sliced

Mayonnaise


Combine ingredients in the order listed using enough mayonnaise to moisten, about 1 cup. Chill.
