Pressure Cooker Peppers

Stuffed green peppers is one of my daughters favorite dishes. I don’t mind them, but I also don’t go out of my way to have them.

She is going off to college soon, so I have been trying to make more of her favorites. I want her to miss home fondly while she is away.

I can honestly say I have never cooked stuffed peppers in a pressure cooker before. I have always cooked them in the oven. Wow, does it save time!


The filling is on the basic side. Been and rice with a little onion. Not that it was a bad thing though. It did taste quite nice. You could definitely change some things to make it more spectacular though.


The soup acts in two ways. First, it gives the peppers and the filling some moisture, and a touch of acid.

Second, it gives the pressure cooker a base so the peppers don’t burn to the bottom.

After 10 minutes, the peppers were cooked through and a little on the soft side. The filling was perfectly cooked.

So, this was definitely a time savor for a classic!

STUFFED GREEN PEPPERS
4 Green Pepper
3/4 Pound Ground Beef
1/2 Cup Cooked Rice
1 Egg
1/4 Cup Water
1 Tablespoon Minced Onion
1 Teaspoon Salt
1/4 Teaspoon Pepper
1 Cup Tomato Soup
Wash and clean the peppers. Combine remaining ingredients, except soup and mix thoroughly. Fill pepper shells with meat mixture. Place on a rack in pressure cooker. Add soup. Pressure cook at 15 pounds for 10 minutes. Reduce pressure.
