Quick Dinner

I say it was a quick dinner, because it felt like that. I do realize that it took over an hour. So, if you are looking for something to put together quickly after work - this isn’t it.

I say it was quick, because once you get everything in the pan, you can walk away for a while. So I guess when I say quick, I mean it wasn’t labor intensive.

I do think perhaps my perspective on quick is a bit skewed. Since starting this Mid Century cooking journey, most things I cook take several hours. The Mid Century cook had more time available than most people these days.

The bacon gave a nice flavor to the dish. As did the onion and pepper. I used peppers from the garden, so they were super fresh.

I also used tomatoes from the garden. We had a plethora of cherry tomatoes ripen all at once, so that is what I used. They were a beautiful blend of red, yellow and orange - so lots of added color as well.


The dish had a jambalaya feel - way more than the actual jambalaya recipe I made the other day!

It was a nice blend of rice and meat and vegetables. We were fans!
HAMBURGER MEXICAN RICE
3 Slices Bacon
1 1/2 Cups Chopped Onion
1 Cup Chopped Bell Pepper
1 Pound Hamburger
3 Cups Diced Tomato
1/2 Cup Uncooked Rice
1 Teaspoon Chili Powder
1 1/2 Teaspoon Salt
1/4 Teaspoon Pepper
Fry bacon and add onions, bell pepper and hamburger. Cook for 5 minutes. Add remaining ingredients and simmer for 1 hour. Add a little water if needed.
