Quick Weeknight Dinner

A lot of the Mid Century recipes I make take some time, like an hour or more. This was a very nice surprise in that is only took just over thirty minutes.

Okay, so it should only take about thirty minutes. I opted to make my own noodles - this made it take longer. . . But I do love a fresh noodle.

The pork was a nice touch. Most goulash I have made calls for beef. Pork has a touch more fat, which gave the dish a richer taste.

The cheese was a strange note. It melted into the other ingredients, almost to the point that you didn’t notice it at all.

The tomatoes added bright pops of color and some acid to cut the fat content of the pork.

The dish was quick, but it was actually quite delicious. You should absolutely try this out!



SAVORY NOODLE GOULASH

3/4 Pound Ground Pork

2 Onions, Minced

2 Cups Diced Celery

6 Ounces Noodles, Boiled

2 Cups Diced Tomatoes

3/4 Cup Shredded Cheese

1 Teaspoon Salt

Dash Pepper


Cook onions and celery in hot fat until tender. Add pork and cook until browned. Gently mix in noodles, tomatoes, cheese, salt and pepper. Place in a buttered 2 quart casserole. Bake in a 350 degree oven for 30 minutes.
