What a great cookie!
The base of the cookie has a very rich, chocolate flavor. I think the brown sugar enhances that chocolate flavor.
The almond extract gives it a little bit of a nutty feel.
The addition of the oats and nuts give the cookie a nice texture.
It isn’t really an oatmeal cookie, more a chocolate cookie with a little oatmeal.
Chilling overnight is an absolute must. I don’t think you would be able to cut the cookie without it being super chilled. Even being chilled, the dough had a tendency to separate a little during the cutting.
If you don’t mind the extra chilling time, these are a great little cookie.
CHOCOLATE OATMEAL REFRIGERATOR COOKIES
1/2 Cup Shortening
1 Cup Packed Brown Sugar
1 Egg
1 Teaspoon Vanilla
1/2 Teaspoon Almond Extract
2 Ounces Unsweetened Chocolate, Melted
1 Cup All Purpose Flour
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup Rolled Oats
1/2 Cup Chopped Nuts
Mix shortening, sugar, egg and flavorings thoroughly. Blend in chocolate. Stir dry ingredients together, blend in. Stir in oats and nuts. Mold in roll 1 1/2 Inches in diameter. Wrap in wax paper. Chill overnight. Heat oven to 350 degrees. Slice dough 1/4 inch thick using a thin, very sharp knife. Place 1 inch apart on baking sheets. Bake 10 to 12 minutes.
