Shredded Cabbage

I used this recipe as a side dish for my Baked Stuffed Tenderloin. Since I had initially had an oriental dish pick for the tenderloin, I had purchased a Napa cabbage.

I think the Napa cabbage added a different flavor to the dish. I think I would like to try it again with a traditional green cabbage just to see.

The dish had a lot of flavor. The onions and carrots also gave the dish some beautiful color.

I do think I would cook the dish a touch less. Maybe 10 minutes instead of 12. . .

The cabbage was just a touch softer than I would have liked. Really, not that much, but just a touch.

This was a great side dish that was very quick to put together.
PANNED CABBAGE DE LUXE
1 Large Onion, Sliced
1 Tablespoon Fat
2 Cups Shredded Cabbage
1 Cup Grated Carrots
1 Teaspoon Salt
1/8 Teaspoon Pepper
1 Cup Boiling Water
Sauté onion in hot fat in a heavy skillet until soft and clear. Add cabbage, carrots, and seasonings. Pour water over vegetables. Cover and simmer for 12 minutes.
