I made this recipe to go with my French Fried Shrimp. There is something about a hush puppy that is the perfect combination to fried seafood.

Hush puppies are basically little fried balls of cornbread. The insides are soft and moist. The outsides are crisp.

I used a self rising cornmeal, which gave the hush puppies a very light feel. They were super airy!

The little bits of onion give the balls a little extra flavor. I think it would be grate with some diced up jalapeño as well.

Using the buttermilk gives the puppies a small amount of tartness.

Hush puppies are super simple to make, only take a few minutes to fry, and are absolutely delicious!
HUSH PUPPIES
2 Cups White Cornmeal
1 Tablespoon Flour
1/2 Teaspoon Baking Soda
1 Teaspoon Salt
1 Egg, Beaten
3 Tablespoons Finely Chopped Onion
1 Cup Buttermilk
Mix dry ingredients. Add beaten egg, onion and buttermilk. Mix well. Drop by tablespoonfuls into 360 degree fat. When they float they are cooked. Drain. Serve hot.
