Strange Macaroni and Cheese

This recipe provides a way to get a little protein into a side dish and make it an entree.

I don’t mind dried beef. I grew up eating it. My husband is not a fan. He was at a work event last night, so being just my daughter and I for dinner, I choose this recipe - he didn’t have to eat it.


The base of the recipe is almost a cheese sauce. I mean, I guess technically it is a cheese sauce, but there isn’t a whole lot of cheese.

The sauce is creamy, but with chunks of pepper and slivers of the dried beef.


There is plenty of sauce to completely coat the macaroni. Even after baking, there is a nice amount of sauce.


The cheese over the top does bake to a nice crust.


There was just something I didn’t love about the dish. I can’t really put my finger on what it was. But I found the dish to be just meh. . .

SCHOOL DAY CASSEROLE
6 Ounces Macaroni
1/4 Pound Dried Beef
1/4 Cup Chopped Green Pepper
4 Tablespoons Butter
4 Tablespoons Flour
2 1/2 Cups Milk
1 Cup Grated Sharp American Cheese
Cook macaroni in boiling, salted water. Frizzle meat, add butter and pepper, cook until soft. Add flour. Slowly stir in milk, cook until thickened, stirring constantly. Add 3/4 cup cheese. Stir until melted. Combine sauce with cooked macaroni. Pour into a greased casserole. Top with remaining cheese. Bake in a 350 degree oven for 35 to 40 minutes.
