Thick and Mayo Like

This dressing is so thick! I wasn’t expecting that. . .

I made this dressing for the Vitamin Salad - that recipe is tomorrow’s recipe!


I was expecting a thinner, pourable dressing. Like a traditional salad dressing.

It is not that.

The dressing is super thick, almost like mayonnaise in consistency.

It does have a lovely flavor. I used vinegar, so there is definitely some tang to the dressing.

The paprika gives the dressing a little color as does the dry mustard. They also give the dressing a distinct flavor.

The egg yolks thicken the dressing even more.

It reminded me of a Cole slaw dressing. It certainly has the tartness from the vinegar and the sweetness from the sugar.
COOKED SALAD DRESSING
1/2 Cup Sifted Flour
1/2 Cup Sugar
2 Teaspoons Salt
2 Teaspoons Dry Mustard
1/8 Teaspoon Paprika
1 Cup Water
3/4 Cup Vinegar or Lemon Juice
4 Egg Yolks
1 Tablespoon Butter
Mix together flour, sugar, salt, dry mustard and paprika in a saucepan. Blend in water and vinegar gradually. Cook over low heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Remove from heat. Beat with a rotary beater adding eggs and butter until smooth. Cool.
