Very Filling

What a simple recipe!

I will start by saying that I think there was about 1/2 cup too much biscuit mix. It was tricky getting the mixture to stay together. I added a small amount of water to the batter to get it to stick. Should I make them again, I would just decrease the amount of dry ingredients.

The bits come out very nicely, not too brown. The sausage cooks well and the onions soften well. The cheese melts around the batter and sausage so you get a nice amount of cheese and sausage flavor in every bite.

The end result resembles a cheddar bay biscuit quite a lot.

These are a great idea to serve as an hors d’oeuvre at a party. I served them during football watching.

They are super filling too. You feel almost like you are getting a meal with each tiny bite.

The only thing I would caution - keep them warm. They don’t taste nearly as good once they get cold.

Cheese and Sausage Bits

3 Cups Biscuit Mix

1 Pound Ground Pork Sausage

1/2 Pound Grated Sharp Cheddar Cheese

1/2 Teaspoon Chopped Onion

In a bowl combine all ingredients and mix with hands until well blended. Shape into small balls. Freeze. When ready to use, place thawed balls on a baking sheet. Bake in a 350 degree oven for 20 to 25 minutes.
