Weird Dinner Night

I think I have mentioned before that I usually try to do at least one of the strange recipes that are so quintessentially Mid Century once a week. This was the recipe for the week that was just flat out weird.

The creamed corn combined with the bread cubes, egg and seasoning gives the dish a feel of a spoon bread.

Spoon bread is a very southern thing. It is basically a very soft, mushy bread.

Adding the sausage to the mixture gives you big clumps of sausage throughout. It doesn’t mix in. It’s just kind of there.


The strangest part is spreading catsup over the top. I don’t know what it was supposed to add to the dish.


The catsup does evaporate a little, this leaves you with a sticky, sweet red paste smeared over the casserole.

It wasn’t inedible. It just wasn’t all that great either. . .
CORN SAUSAGE CASSEROLE
4 Eggs, Beaten
2 1/2 Cups Cream Style Corn
1 Cup Soft Bread Crumbs
1 Pound Sausage Meat
1 Teaspoon Salt
1/8 Teaspoon Pepper
Catsup
Mix together eggs, corn, bread crumbs, sausage meat, salt and pepper. Pour into a greased 8 inch deep casserole. Spread catsup over the top. Place in a pan and pour water to 1 inch depth. Bake in a 350 degree oven for 1 hour.
